Is Cabbage one of the dishes that you get excited about? That’s probably not the case for many, but I promise you that this particular recipe will be different.
This is a fairly simple meal that is very quick to prepare, and can be ready in minutes. Cabbage cooks fairly quickly and because of distinct flavours in this dish, it is one that I find myself going back to over and over again.
Cabbage was a common dish we had in my youth, however those ays it was prepared the same way and thus was not very exciting. I have discovered though that one can prepare this meal in various different ways.
From my observation most people use cabbage mostly in preparing coleslaw salad which, if done correctly, is delicious and very easy to prepare.
Coconut Cabbage and Potato Curry – Accompaniments
Cabbage is a good main dish and can be a side dish as well for many meals. It can be made into a quick dinner, a vegetable dish, can also be a major ingredient in a soup or a part of a main dish.
One quick way of cooking cabbage is by steaming, buttering and salting. Cabbage however tastes better when mixed with other vegetables and even meat.
A common way of preparation of cabbage meal is cooking it in sauteed onion and tomatoes and adding other vegetables to it for colour. The sauteed onions and tomato mix makes a great base for the cabbage and adds alot of flavor to it.
Noted below is the recipe for coconut cabbage and potato curry. This particular recipe can be used as a main dish on its own, a dish that is also vegan friendly. For it to be a main dish this I would suggest adding another medium potato so that there is a little more starch in the meal. This same meal can be made keto friendly by removing potatos from the recipe and replacing them with cubed beef or cubed chicken. These will need to be cut in small cubes or even minced/ground. The cooking directions would still remain the same except once the beef or chicken is added to the onions please allow to sautee for at least 5 more minutes before adding the coconut milk.
Starch dishes that go well with Cabbage and Potato Curry
One side dish that goes well with this dish is chapati, they go so well that the combination makes a hearty meal. Another accompaniment that would go well with this mal is ugali (corn-meal).
Other recommended options are steamed rice, Quinoa, sweet potatoes…and the list goes on. Really you can enjoy this dish with almost any starch dish.
Cooking Directions for Coconut Cabbage and Potato Curry
- 5 cups Cabbage
- 2 cups shredded carrots
- 2 medium potatoes, peeled and cubed
- 1 medium onion, cubed
- 1 cup coconut milk
- 2 cups water
- 1 tablespoon coconut oil
- 1 tbsp curry powder
- 1 tbsp bouillon powder
- 1 tbsp Montreal Chicken Spice
- 1.5 tsp Turmeric Powder
- Sautee onion, for approximately 3 minutes until tender.
- Add all the spices in except turmeric powder.
- Add the cubed potatoes and stir.
- Pour in the coconut milk, water then stir and cover.
- Simmer till the potatoes are tender ( approximate 5 minutes).
- Sprinkle the turmeric powder, stir.
- Slowly add in the shredded cabbage and carrots.
- Cover for about 4 minutes then mix slowly for about a minute.
